Straining & Filtering

After the steep period, the flavoring substances must be strained from the liquid. First strain off the liquid with a wire mesh strainer. If you are straining a fruit liqueur, it is important at this point to squeeze and mash the fruit to extract all the flavor and alcohol. Pass the liquid through the wire mesh strainer once or twice more to remove any pulp.

To filter the liqueur place a coffee filter in a funnel and pour the liquid through. Sometime the filtering can take a long time but don't rush it. Simpley cover the container and set it aside to drain. Repeat this filtering process, using a clean filter each time, until the desired clarity is obtained.
