Apricot Liqueur
1 cup water
½ pound dried, pitted apricots
1 tablesppon powdered sugar
¼ cup sliced almonds
2 cups brandy
1 cup sugar
½ cup water
Place water in a saucepan, bring to boil and remove from heat. Add apricots and let soak for 10 minutes or until most of the water is absorbed. Let cool. Drain off any remaining water.
Place apricots in a jar and spinkle with powdered sugar. When sugar has dissolved, add almonds and brandy. Stir well to mix. Cover tightly and let steep in a cool, dark place for at least 2 weeks. When steeping period is complete, stain and filter liquid.
Combine sugar and water in a heavy saucepan. Bring to boil over medium heat. Reduce heat and simmer until sugar has completely dissolved, about 3 minutes. Remove from heat and let cool to room temperature.
Combine sugar syrup with the filtered brandy mixture. Pour into bottles and cap tightly. Let age at least 1 month before serving.
