Apple Liqueur
1 pound red delicious or other sweet apples
1 2-ince cinnamon stick
2 whole cloves
2 cups brandy
1 cup sugar
½ cup water
Cut apples in quarters and remove cores, do not peel. Cut quarters in half.. Combine apples, cinnamon stick, cloves, and brandy in a large jar. Cover tightly and let steep in a cool, dark place for 2 weeks.
When steeping period is complete, stain and filter liquid. Combine sugar and water in a aheavy saucepan. Bring to a boil over medium heat. Resuce heat and simmer unitl sugar has completely dissolved, about 3 minutes. Remove from heat and let cool to room temperature.
Combine sugar syrup with the filered brandy mixture. Pour into bottles and cap tightly. Let age at least 1 month before serving.
